Dinner of Champions

I’ve never been one for breakfast foods. When I was a kid, I would eat things like grilled cheese sandwiches, hot dogs, and pizza for breakfast. Over time, I thankfully grew into liking yogurt and granola as a way to start my morning. Nowadays, if I work out first thing I have a protein shake for breakfast, or if I don’t, I have yogurt, rolled oats, and fruit. I seldom eat breakfast food; I really only eat it if I go out to breakfast or if it’s a holiday. And when I do eat breakfast food, I only eat eggs, oatmeal, or chocolate chip pancakes/waffles or kringle (a Danish dessert that can be eaten for breakfast) if I feel like splurging. So as you can see, breakfast is not my favorite meal of the day (all though I do respect that it is the most important one and that you should eat within 30 minutes of waking up). Tonight though, I was craving breakfast food and decided to make myself breakfast for dinner.

Going in, I didn’t really have much of a plan of what I wanted to make but I couldn’t have been happier with the result. I made scrambled egg whites with onions, bell peppers, spinach, cherry tomatoes, and some red pepper flakes sprinkled on top. I then toasted some whole wheat bread, put a layer of avocado on it, and then piled my eggs on top. It was amazing, I didn’t want the last bite to come (which is really saying something for me because it was breakfast food). The veggies – specifically the onion – added a lot of flavor to the egg whites, which I normally find so bland tasting but only eat because they’re low in fat. The red pepper flakes weren’t noticeable when you first took a bite, but then after chewing you could taste the kick. The avocado set off the spice very well because of it’s creamy texture (which now proves I definitely should have put guacamole on my burrito the other day). I then finished off my breakfast with a bowl of green grapes. I personally love ending a meal with fruit because fruit leaves a nice flavor on your palate even after eating.

If you want to make this scrumptious scrambled egg recipe for yourself, just be sure to add the onions and red peppers right away with the eggs, and then add the tomatoes and spinach about a minute or two before the eggs are finished because tomatoes and spinach take less time to cook. Also be sure to cook your eggs on a low heat.  Even though it takes a bit longer they taste so much better and it’s worth it. I would also recommend adding some feta cheese to it at the last minute. I would have done that but I already had feta in my lunch and wasn’t in the mood to have it a second time for the day. For a girl who doesn’t like breakfast, my breakfast dinner was my favorite meal of the day.
