I occasionally find myself in a predicament where I only defrosted enough chicken for one meal, and then can’t find a good recipe to spruce up my dish. It can be hard to turn a four serving recipe into a recipe for one because the measurements can be off. I recently made my own single-serving recipe for honey-Sriracha chicken inspired by Food Network’s Honey-Sriracha chicken wings recipe. Below is what I whipped up, and it works perfectly for one meal. Dinner for one has never been so easy.

Ingredients:
- 1 serving chicken breast
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon unsalted butter
- 4 teaspoons honey
- 1 tablespoon Sriracha
- 1/4 tablespoon soy sauce
- 1/2 teaspoons lemon juice
- Dash of garlic powder
Preparation:
- Place olive oil in a pan and season both sides of chicken with salt and pepper. Sauté chicken about 4 minutes on each side, or until done
- While chicken is cooking, melt butter in another pan. Mix honey, Sriracha, soy sauce, lemon juice and garlic powder in a bowl, and taste to check spice level. Add mixture to melted butter and bring to a simmer.
- Add finished chicken to sauce and quickly coat each side. Serve and enjoy.
