Mexican Chickpea Salad

Sometimes all you need is a good salad, and this salad is one of my favorite ones to make. It’s always a winner for me, and my friends love it too. It’s super simple but still has lots of flavor packed into it. All you need is:

  • Chickpeas
  • Spinach
  • Bell pepper
  • Cherry tomatoes
  • Cucumbers
  • Feta cheese
  • Avocado
  • Mango peach salsa



Simply chop up the bell pepper, cherry tomatoes, cucumbers, and avocado. While doing this, take as many chickpeas as you desire, put some of the salsa on it (you should cover them completely with salsa and have a bit extra because the salsa is going to act as the dressing) and microwave it for 45 seconds. Once this is done, throw all of the ingredients into the bowl and that’s it! It’s that simple. This salad is super healthy with all of the vegetables and protein-packed chickpeas, but still very flavorful from the salsa. I especially like this salad because since the chickpeas are warm, it works well for dinner if you’re like me and enjoy warm dinners. IMG_7092
