I’m not afraid to admit that I like chocolate chip cookies more than I like most people – that’s why I’m the self proclaimed cookie monster. Even if you have a bad cookie, it’s still good and can brighten up your day. My favorite chocolate chip cookies are my mom’s triple chocolate oatmeal cookies. Whenever I would bring them to school, people would chase me down the hall in an attempt to snag one (you think I’m kidding, but I’m not). Everyone would go crazy over them, and I guarantee you will too if you try them.
The recipe is quite simple, and all you need besides the typical cookie ingredients is some oatmeal and lots of chocolate chips:
- 2 cups butter
- 2 cups sugar
- 2 cups brown sugar
- 4 eggs
- 4 cups flour
- 5 cups of old fashion oatmeal – put in a food processor and process until it is a coarse powder
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp baking powder
- 2 tsp vanilla extract
- 12 oz white chocolate chips
- 12 oz chocolate chunks
- 12 oz semisweet chocolate chips or 6 oz semisweet chocolate chip and 6 oz dark chocolate chips
To start, preheat the oven to 375 degrees.
From there, cream the butter and both sugars, and beat for about 3 minutes (make sure they’re really creamed together). Then, add the eggs and vanilla. Add the oatmeal before adding the flour, salt, baking powder and baking soda, in that order. Lastly, add the chips – the most delicious part.
Use a small or medium ice cream scoop, or roll the dough into balls. Place the cookie dough two inches apart on a cookie sheet.
Bake for 8 – 12 minutes, depending on the size of the cookies. Bake until golden brown.
After that, you’re all finished. I love these cookies because the oatmeal is subtle in taste, yet adds a surprisingly wonderful texture. I also love the three types of chocolate chips in the cookie because it allows for contrasting flavors and added chocolate gooeyness.
