Tikka Masala Stir Fry

One of my favorite things to make when I’m feeling lazy is a stir-fry. They’re healthy, require minimum effort, and there is so much room for variety with flavors. Recently I made an Indian-style stir-fry, and the recipe was simple:

  • Onions
  • Bell peppers
  • Carrots
  • Broccoli
  • Green beans
  • Cherry tomatoes
  • Snap peas
  • Chickpeas
  • Almonds
  • Cashews
  • Tikka Masala
  • Sriracha
  • Avocado
  • Garlic salt
  • Pepper
  • Cumin
  • Turmeric
  • Red pepper flakes

The instructions for sautéing the vegetables are the same as the ones for the Thai peanut and avocado stir-fry: I sautée the onions for two minutes in olive oil, then throw on the bell peppers, next the carrots, then broccoli, followed by green beans, and finishing it off with the cherry tomatoes and snap peas together. I cook each vegetable for two minutes before adding the next one, and cook it until it looks finished after I add the cherry tomatoes and the snap peas. For the chickpeas, you can microwave them for around 45 seconds or them them in with the vegetables when you put the green beans on. After that, I added the other ingredients, sauces, and seasonings to taste. You’re then left with a healthy and filling meal, that took next-to-no effort. Enjoy!
