It’s always fun to repurpose your leftovers and create a new meal out of them. I recently made short ribs [INSERT LINK] with my mom, and it was scrumptious. The short ribs recipe is definitely a crowd pleaser because it’s flavorful and the meat is impeccably tender. We had some leftovers from the meal, so my mom had the great idea to turn it into a soup.
To turn it into a soup, we placed the sauce in a pot and cut the meat off the bone. We then diced the meat before adding it to the pot. We added 1 cup of cooked barley to add some grain to it. We felt that it needed more liquid, so we put 2 cups of beef stock and 1/2 cup of Chianti in the mix. We allowed for it to heat up before serving it with some cheese.
This soup was just as good as the short ribs. By making the leftovers into soup, it allowed us to use our leftovers without having the eat the same meal two nights in a row. If you try the short ribs recipe and have leftovers, consider making them into soup the next day.
