Wasa bread, sautéed greens, cheese & sunny side up egg

I’ll be honest, I’m not a runner. I loathe running, actually. Every time I run for the first time in a long time, I think it’s fun and that I’m going to become an avid runner. Then after about two days in, I realize that’ll never happen. While visiting my grandma in New Jersey, I was desperate to workout. Left without a gym and no other options, I was forced to resort to running. I figured I could manage because I would only have to do it for three days. And on the third day, a miracle happened – I ran my longest distance ever. I did a whopping six miles. I’m sure some of you reading this are thinking, “psh, that’s nothing!” For me though, this was a huge deal and I was so proud of myself. When I returned to my grandma’s house, I wanted to reward myself with a scrumptious breakfast.

I had a strong hankering for eggs, which is weird because I don’t eat eggs often. I always stick to omelets and scrambled eggs, so my egg cooking skills are limited. But after running six miles, I was feeling ambitious so I decided to try to make a sunny side up egg for the first time.

I heated a skillet and let some butter melt in it. Once almost melted, I turned the heat down to low and threw some sautéed mixed greens in. While they began to wilt, I added an egg to the other side of the pan. Since I had no idea what I was doing with the egg, I Googled how to cook it. The website said to cook over a low heat until it was all opaque so there wasn’t any clear whites left.

The spinach finished cooking first so I placed that over a piece of Wasa whole grain bread. If you don’t know what Wasa is, it’s like a crispy cracker-like bread. It’s also quite good for you, and as a bonus it’s tasty. I placed the sautéed greens on it, and then added some cheese.

Once the egg was finished cooking, I gently slid it on top of the cheese. To my surprise, I managed to not break the egg. I then added a touch of salt and pepper, and looked at my beautiful creation was pride. This was an amazing meal to reward myself with after a long run. My mom and my grandma walked in as I was eating it, and they said it looked so good that they made their own. This meal is a surefire way to start your day.
