Basque cuisine refers to the northern region of Spain bordering France with food that typically includes meats, fish and beans. I’ve never tried basque cuisine, but I got the opportunity to at Chez Gladines after a newfound Parisian friend reccomended it to me and Lindsay.
I went into Chez Gladines not knowing what basque cuisine entails, and it didn’t help I couldn’t read the menu. I saw they offered escargot, though, and I had to order some before leaving Paris. Lindsay and I split the cassolette basque escargot, which was cuisiné dans une sauce basquaise (or escargot in basque sauce). When the dish came out, it was much different form the typical garlic and butter sauce I’m used to, but it was delicious. The escargot was mixed in with all the ingredients instead of being in individual shells, and the sauce was thick, rich, slightly cheesy and full of vegetables. The sauce was perfect for dunking bread in, too. Although this wasn’t like what I’m accustomed to, I really enjoyed it.
For my entree, I ordered the cassoulet basque: Haricots blancs cuits dans la graisse de canard, manchon, poitrine de porc, saucisse de Toulouse et chorizo (or white beans cooked in duck fat, muff, pork breast, Toulouse sausage and chorizo). This meal was the definition of hearty with all the meat, all the beans and all the comfort you could possibly want (and maybe slight artery clogging, but it’s vacation so we don’t worry about that). My favorite of the meats was the chorizo, but they were all delicious. The beans were a nice touch and helped to make sure the dish wasn’t overwhelmingly meaty.
I’ve never had anything quite like this dinner. I’m normally not a huge meat eater (I prefer fish and vegetables), but this was divine. And even though the escargot wasn’t what I expected, I’m glad I got to try a new take on a classic French dish. Basque food – give it a try.
