Turkey & Artichoke Bruschetta Pita

rOne of the best things about being home is all of the delicious spreads my mom has for adding to sandwiches. I love experimenting, so this time I decided to try out an artichoke bruschetta spread. I’ve recently fallen in love with artichokes, so they seemed like a great option to me.


I contemplated what flavors would go well with the dip, and I decided on:

  • Whole wheat pita bread
  • 1 slice of deli turkey
  • 1 slice of provolone
  • Artichoke Bruschetta spread and dip to taste
  • Cherry tomatoes
  • Greens (I used baby spinach and arugula mix)


I sometimes prefer making sandwiches on pita bread because you can pack more flavors in the pockets than you can between two slices of bread. I added turkey for protein and provolone because cheese is always a good decision. I always add some greens to my sandwiches because I love eating vegetables with every meal for nutrition purposes. I figured the cherry tomatoes would be a good call and compliment the bruschetta essence in the spread. I then pressed it on the panini maker to toast the bread and melt the cheese.

I was a bit worried for how this sandwich might taste, but I was so happy with it. The artichoke added a nice salty and mild green flavor to it. It wasn’t too salty with the turkey, and the green flavor in the artichoke spread complimented the greens I put on my sandwich. The tomatoes also contrasted the artichokes well and added some acidity to the sandwich. Between the sandwich and the grapes, I was stuffed and had a happy tummy. I would make this again, and I hope you decide to as well.
