I couldn’t help myself and went to Vegan Treats the other night. They’re vegan desserts to their healthier, right? Okay, so that’s not true but that’s what I tell myself to justify eating there. I ordered the mini cake I almost got last time I went: vanilla coconut custard cake. It is four layers of French vanilla cake each smothered with light, whipped coconut custard and encased in a toasted coconut shell.
I got it to-go and enjoyed my cake at home. The vanilla cake itself was moist and tasted good, and I really liked the coconut flavor. I didn’t realize the custard was whipped, so I was slightly disappointed because I don’t enjoy whipped frostings as much. It was still good, but I probably would have gotten something else with a buttercream frosting instead had I known. It was sweet with the coconut but not overpoweringly rich and tasted lighter because of the whipped custard. The coconut shreds on the outside added a nice contrasting crunch to the fluffy cake. I enjoyed the brownie chunk cheesecake that I got last time more, but I still really enjoyed my cake.
