Sometimes all you need is something light and fruity, and this salad is the perfect way to do that while still getting some veggies in. All you need is spinach for the base, then add in some fresh cut strawberries and blueberries. Give it some protein with tofu – it can be cooked or raw – or some nuts if you don’t like tofu. Finish is off with some goat cheese and balsamic vinaigrette, and it’s that simple! Bon appétit!
