Stuffed peppers

If you’re looking for a fun way to spruce up dinner, stuffed peppers are a great option! They’re easy to make, but provide a fun alternative to a normal dinner. My mom found a stuffed peppers recipe from, and we used that. The ingredients are:

  • 6 green bell peppers
  • 1 lb ground beef
  • 1cup onion, chopped
  • 1 tablespoon garlic, minced
  • 1 egg, whisked
  • 1cup breadcrumbs
  • 1 tablespoon parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon red pepper flakes(optional)
  • 1teaspoon oregano
  • 1teaspoon parsley

The recipe says it serves four to six people. We weren’t able to find smaller peppers, so we used four large peppers and two pounds of meat instead – we did more meat because the peppers were larger. We also subbed brown rice for the bread crumbs. What I really like about this recipe is the flavor the meat gets. When you taste some of it, with the gooey cheese and the crunch of the pepper, it’s a great combination. Below is the recipe from the website:

  1. Preheat oven 350 degrees.
  2. Lightly spray baking pan with cooking spray.
  3. Blanch peppers in boiling, salted, water 5 minutes.IMG_1753
  4. Briefly, and lightly, hand mix ground beef mixture, adding all ingredients from ground beef to parsley, except tomato sauce topping. IMG_1756
  5. With a tablespoon, stuff each pepper with meat mixture.
  6. Mix ingredients of tomato sauce and spices, or use any tomato sauce of your choice.
  7. Place 2 tablespoons of tomato sauce in baking pan covering bottom. (This will be a small amount of covering).
  8. Add meat stuffed peppers to dish.IMG_1762
  9. Drizzle tomato sauce over top of stuffed peppers.
  10. Add optional 1 piece of bacon to top of each pepper.
  11. Bake at 350 degrees for 50-60 minutes.
  12. When serving, dish out tomato “gravy” to top of each pepper.IMG_1798
